Cider is a low-alcohol drink made from apples, its strength does not exceed 7 degrees, classic cider is produced from apple varieties approved for this purpose: Bitter Tremlett, Black Kingston, Yarlington Mill, a variety with a funny name - Fox Cub, Dabinett and many others.
The officially approved number of varieties for industrial cider production is 48.
The drink is made by natural fermentation of crushed apples, without adding yeast. By variety, apples are divided into sour, sweet and sour, sweet, bitter-sweet and bitter, therefore, the ciders obtained from them are classified depending on the apple varieties taken (sweet, dry, semi-sweet, semi-dry or traditional).
Historically, cider is considered to be an invention of the Celts. There are references to cider among the Scandinavians (however, the Scandinavians made it more with honey). Cider is mentioned in various mythological sources - mainly Celtic and German-Scandinavian. Therefore, we will consider the "cuisine" of the drink to be German.
Today we will make cider at home and for this we will take Crimean apples, sugar, water and lemon.

Apples - 800 g
Sugar - 250 g
Water - 1200 ml
Lemon zest - 10 g

1. Cut the apples into slices, you can leave the seeds (optional).
2. Place the apples in a clean jar.
3. Add sugar and lemon zest.
4. Fill with water.
5. To make the process more visual, cover with a rubber glove and leave at room temperature for a week or two (the cooler it is, the less fermentation).
6. Fermentation is not particularly vigorous, but a lot of bubbles appear on the second or third day.
7. Strain the finished drink several times through cheesecloth, cool and treat your friends.
8. Homemade cider has a pleasant sweet and sour taste, aromatic, sharp, reminiscent of fresh apple kvass.
