Chicken rillette: a great appetizer with an unusual taste
Riyette is a French appetizer, very reminiscent, at first glance, of an ordinary pate. But it is, rather, a special kind of spread, which differs from pate in its consistency.

It is not pasty in rillette, but very heterogeneous, with the preservation of meat fibers. The dish can be served as an appetizer for bread or as an addition to a side dish. It is very convenient to take riyette in a jar with you as a snack. Cooking such a dish, to my surprise, turned out to be very simple and fast. The longest process is cooking meat. It must be cooked until it is so soft that the fibers are very well separated from each other. Everything else is not difficult.

Chicken legs - 4 pcs.
Onion - 1 pc.
Carrot - 1 pc.
Garlic - 1 clove
Salt, pepper - to taste
Basil, parsley, oregano - to taste
Fresh dill - to taste
Water - 1 l

1. To make chicken rillette, I take the following ingredients. Instead of chicken legs, you can use any chicken meat on the bone.
2. Peel the carrots and onions and cut into large pieces.
3. Put the washed chicken legs, carrots and onions, garlic, spices: salt, pepper, dried herbs into a saucepan with cold water (you can use any to taste instead of basil, oregano and parsley).
4. Bring to a boil and cook over low heat for 1 hour. It may take longer if you use, for example, thighs or an increased amount of ingredients. If necessary, add water during the cooking process.
5. Throw the contents of the pan into a colander and drain the broth. It can be used for your own purposes.
6. Transfer the vegetables to a separate bowl and knead with a fork until smooth.
7. Cool the chicken legs, separate the meat from the bone and also knead with a fork. If it turns out with difficulty, then with our hands we divide the pieces of chicken into smaller fibers.
8. We combine the chicken part with the vegetable part, add fresh dill.
9. Mix thoroughly and transfer to a container or glass jar. You can pour a tablespoon of broth on top to make the rillette juicier. Close the lid and refrigerate until completely cool
