Couscous with chicken, feta cheese and tomatoes

According to Wikipedia, couscous is a wheat grain that serves as the basis for the dish of the same name of Maghreb or Berber origin. I tried a similar dish in one of the restaurants. No, not in Morocco or Tunisia, but here in Vietnam. It is cooked by a Libyan.

In fact, the preparation of the entire dish consists of preparing the ingredients for it. It turns out very tasty, satisfying! A great option for dinner. I had a concentrated chicken broth. To prepare couscous with chicken, feta cheese and tomatoes, prepare the products according to the list.

Ингредиенты

Couscous - 200 g

Any broth - 600 ml

Chicken fillet - 2 pcs.

Carrots - 1 pc.

Tomatoes - 4 pcs.

Green onions - 1 bunch

Feta cheese - 200 g

Cinnamon sticks - 2 pcs.

Salt, pepper - to taste

1. Dilute the broth in water, add carrots cut into quarters and cinnamon sticks, cook for a couple of minutes. The carrots should become slightly soft, but not boil over. Remove the cinnamon sticks. We will not need them anymore. Salt, if necessary. Add couscous. Cover with a lid and set aside for 5 minutes. During this time, the cereal will completely absorb the liquid.

2. Loosen it with a fork. This is how fluffy the couscous will be. Cover with a lid and set aside.

3. Rinse the chicken breast, dry it, sprinkle with salt and pepper. Fry on both sides in a small amount of sunflower oil. The meat should be completely fried, that is, it will be white inside.

4. Let it cool slightly and cut into pieces 0.7-1 cm thick. And also set aside for now.

5. Cut the tomatoes into fairly large slices (4-8 pieces), lightly fry in sunflower oil, stirring constantly. The tomatoes should not fall apart, but only become a little softer. Remove the pan from the heat. Add chopped green onions. Stir.

6. Now collect all the ingredients. Put the couscous with carrots in a baking dish. On top of it - tomatoes with onions.

7. Then pieces of chicken breast, as if pressing into the couscous. Sprinkle everything with chopped feta cheese. Bake in the oven at 200 degrees for about 30 minutes. Focus on your oven. If you want it juicier, add a little more broth. I added about 0.5 cups.

8. Couscous with chicken, feta cheese and tomatoes is ready. Serve warm with yogurt.
