Buckwheat with vegetables is a wonderful dish for every day.

It can be cooked in a saucepan, in pots, and in a multicooker. Today I suggest cooking buckwheat with vegetables in a frying pan. I really like this method, because while some vegetables are sautéing, you can prepare the next ones. Just a little time - and a wonderful dish is ready. Buckwheat with vegetables is a Lenten dish, so it can be used to diversify the menu of those who observe the fast and vegetarians. But our dish is also very good as a side dish for meat.

I indicated the amount of vegetables approximately, since you can take not all the vegetables on the list or take others. I recommend using onions and carrots. The more varied the vegetables, the tastier and richer the dish will be. You can use frozen vegetables.

Buckwheat - 200 g

Onion - 1 pc.

Carrot - 1 pc.

Bell pepper - 1 pc.

Eggplant - 1 pc.

Tomato - 1 pc.

Green beans - 100 g

Cauliflower - 100 g

Vegetable oil - 2 tbsp.

Garlic, herbs - to taste

Salt - to taste

1. First, chop the onion and carrot. I chop them quite coarsely because I like it when the vegetables retain their shape in the finished dish.

2. First, sauté the onion in vegetable oil until translucent, add the carrot. Cook the vegetables together for 5 minutes.

3. Meanwhile, chop the bell pepper. I used half a red and half a yellow one, for beauty.

4. Cut the eggplant into circles or half circles. Cut the tomato into slices.

5. First add the eggplant to the pan, and after 2-3 minutes - the pepper.

6. Mix and cook the vegetable mixture for 5-7 minutes under a lid over medium heat. You can leave frozen vegetables undefrosted, add them to the pan, cover with a lid.

7. After 5 minutes, add the washed buckwheat to the vegetables.

8. Pour water into the pan at a ratio of 2:1 to buckwheat. Put chopped tomato on top and, to taste, garlic. Add salt, increase the heat, cover with a lid and cook our dish until the water has completely evaporated, about 10-12 minutes.

9. Leave the dish under the lid for 5 minutes, and then serve. Buckwheat with vegetables in a frying pan was a success! Add your favorite greens to the plates and call your family to the table. The magnificent aromas of the vegetables have permeated the buckwheat, it has become tender and crumbly. The combination of different vegetables turned out to be very harmonious.

10. Buckwheat is delicious on its own, but with vegetables it turns out incomparably tastier! A hearty, appetizing dish is quite self-sufficient, but if you serve this side dish with meat, you are guaranteed admiring praise from your family!
