Since then, I have been preparing it every season. The green tomato salad "Finger-licking good" goes well with any side dishes, and especially with potatoes - in any form, boiled in their skins, fried, baked or mashed. This salad also goes well with meat or fish. It is convenient for me to close it in 500 and 700 ml jars.

Green tomatoes - 3 kg
Onions - 3 pcs.
Bell peppers - 300 g
Carrots - 3 pcs.
Salt - 1 tbsp.
Sugar - 5 tbsp.
Vegetable oil - 200 ml
Table vinegar 9% - 60 ml

1. Cut the tomatoes into random pieces, not too large. Be sure to remove the place where the stalk was attached. Transfer the chopped vegetables to a deep bowl or saucepan.
2. Next, it's the carrots' turn. Peel them in advance with a vegetable peeler, now grate them on a coarse grater or a Korean carrot grater, but not into long strips. Transfer the carrots to the bowl with the tomatoes.
3. Peel the large onion and cut it into halves or quarters of rings. Transfer it to the rest of the vegetables.
4. Now it's the turn of the sweet pepper. Cut it into several pieces, remove the seeds and stalk, cut the vegetable into thin strips. Pour into a bowl (saucepan).
5. Pour salt and sugar into the bowl with the vegetables, you can use any spices to taste.
6. Now pour the required amount of vinegar and vegetable oil into the bowl, mix everything thoroughly and cover the bowl with a lid, leave for several hours. Although in my practice there were such cases when vegetables "spent the night" in the refrigerator.
7. After several hours, the vegetables will give juice and you will get quite a lot of aromatic marinade. Arrange the salad in clean jars and fill them to the top with marinade. If it is not enough, you can top up the jars with boiling water.
8. Cover the jars with lids and send them to sterilize. To do this, put a piece of clean cloth on the bottom of the pan. Place the jars and add water to the "shoulders" of the jars. Sterilize after the water boils in the pan: 500 ml jars - for 15 minutes, and 0.7 and 1 l jars - 20 minutes.
9. Carefully remove the jars from boiling water and roll up the lids (screw them on).
10. Turn them upside down and wrap them in a blanket for 24 hours. Then the jars of finger-licking good green tomato salad can be moved to a cool, dark place for storage.
