Carrots marinated with garlic

Pickled carrots prepared according to this recipe can be an excellent side dish for meat or used as a spicy appetizer.

In order for the carrots to look nice in the jar, they are usually cut not only into circles, but also into the shape of flowers or stars. A special cannulation knife is used for this.

Ингредиенты

Fresh carrots – 1 kg.

Garlic – 100–200 g

Refined oil – 150–200 g

Filling:

Water – 1 l

Coarse salt – 30 g

Granulated sugar – 50 g

Vinegar essence strength (70%) – 25 ml.

Рецепт

1. To prepare the preserves, take fresh brightly colored carrots, garlic, refined sunflower oil, water, salt, sugar and 70% vinegar essence.

2. Wash, peel and cut the carrots into 3-5 mm thick circles. If desired, you can cut out stars or flowers using a special device.

3. Blanch the chopped carrots in water at a temperature of 90 ° C for 2-3 minutes, then place in a colander and cool.

4. Peel the garlic cloves from the dry shell and chop finely.

5. Place the carrots and garlic in a large bowl, pour over the sunflower oil.

6. Stir the mixture until all the ingredients are evenly distributed.

7. Fill the sterilized 0.5 l jars with the mixture (you should get 4 jars).

8. Bring the water for the filling to a boil, dissolve the sugar and salt in it, bring it to a boil again and remove from the heat. Only then pour in the vinegar essence.

9. Fill the jars with hot filling.

10. Cover the jars with boiled lids and sterilize for 20-25 minutes, then seal hermetically.
