Eggplant and pepper caviar

There are many recipes for eggplant caviar, because it is one of the most popular snacks in the summer. Tasty, healthy and inexpensive. I offer my version, which my mother and grandmother taught me.

The point is that all the ingredients are fried in sunflower oil. After the eggplants are boiled in a saucepan or baked in the oven, they are cooled, peeled and minced with onions, bell peppers and tomatoes, and then all this is stewed in a frying pan until the liquid evaporates. In addition to the above ingredients, you also need to take garlic and salt.

Ингредиенты

Eggplants - 1 kilogram;

Bell peppers - 300 grams;

Onions - 2 pieces;

Tomatoes - 300 grams;

Garlic - 3 cloves;

Sunflower oil - 60 milliliters;

Salt - to taste;

Sugar - to taste.

Рецепт

1. Put the eggplants in a saucepan with water and cook until done. But do not overcook them. As soon as a fork can easily pass through the eggplant flesh, they are ready. You can bake them in the oven.

2. Cool the boiled eggplants.

3. Peel them.

4. Peel and wash the onion and bell pepper. Wash the tomatoes.

5. Grind the eggplants, bell pepper, onion and tomatoes through a meat grinder.

6. Put them in a frying pan and begin to simmer over medium heat until the liquid evaporates, stirring occasionally.

7. As soon as there is no more liquid, begin to pour in the sunflower oil and simmer for another 10-20 minutes, stirring. Then turn off the finished caviar. Add salt and sugar to taste. Add chopped garlic, stir.

8. Fragrant, moderately spicy eggplant caviar is ready.

9. Serve as an appetizer at any time of the day.
