Lenten pancakes with starch and flour on water

During Lent, you can bake simple Lenten pancakes for breakfast.

To make them thin and elastic, I suggest kneading the dough with a mixture of flour and starch. Lenten pancakes can be served with honey or jam, and can also be used for stuffing with Lenten fillings (for example, mushrooms, cabbage, rice).

Wheat flour - 50 g

Corn starch - 40 g

Water - 250 ml

Vegetable oil (in dough) - 1 tbsp

Salt - 1/2 tsp

Sugar - 1 tbsp

1. Using a whisk, combine flour, starch, salt and sugar in a bowl.

2. Pour in water in small portions and mix the dry ingredients thoroughly with water to avoid lumps. Work slowly with a whisk. Pour in a new portion of water when the previous one is mixed in.

3. After you have added all the water to the dough, pour in a spoonful of vegetable oil, so you don’t have to grease the pan each time.

4. Let the dough sit for 10-15 minutes and mix it thoroughly again. Also, be sure to mix the dough before each pancake, since starch tends to settle to the bottom.

5. The consistency of the dough is like regular pancake dough, similar to liquid kefir.

6. Heat the pancake pan over medium heat. To be on the safe side, grease it with oil before the first pancake. Pour the batter into the pan in a thin layer. Let it spread over the pan by rotating the pan. Bake the pancakes for 1-2 minutes on each side. Usually, the pancake takes a little longer on the first side.

7. Then turn the pancake over with a knife or spatula and bake it on the second side for about 1 minute.

8. Bake all the pancakes, stacking them on a plate.
