Vzvary - this is what they called rich compotes made from dried fruits in Rus'. There is an opinion that dried fruits were only brewed with boiling water and infused, but there are also options when dried fruits were boiled in turn, depending on their hardness and softness. In my experience, dried pears and apples take the longest to cook for compote, then dried apricots, dried apricots, dates, figs, and prunes and raisins take the least time, although ... look at their appearance, i.e., their degree of dryness!

It is also believed that the vzvar does not need to be sweetened, but this is also a matter of taste, and depending on what acidity and sweetness you got from the dried fruits. In my opinion, honey is not superfluous there in any case, and decide on the amount to taste ...

Vzvar was served and sold at festive celebrations on the occasion of Christmas and Maslenitsa, and was also present in the everyday menu. Sometimes it is recommended to maintain strength during Lent and to recover from illnesses. Dried fruits are good for digestion, for the respiratory and nervous systems, and also remove toxins from the body.

The amount of ingredients in many recipes for decoctions is written in grams per 1 liter, but I doubt that anyone will bother with weighing dried fruits, so I estimated the approximate weight of 100 grams of dried fruits and indicated in handfuls. In general, choose the composition and quantity according to your opinion and taste.

Ингредиенты

Dried apples - 2-2.5 handfuls

Dried pears - 1.5 handfuls

Dried apricots - 1 handful

Prunes - 1 handful

Other dried fruits - to taste

Sugar and/or honey - optional and to taste

Water - 1-1.2 l

1. Rinse the dried fruits to remove dust, and if they are store-bought, rinse them more thoroughly! Dried apples, like other dried fruits, come in different densities and weights, but on average 100 grams is 2-3 full handfuls.

2. Dried pears are usually heavier, 100 grams is 1.5 handfuls.

3. Dried apricots, about 100 grams, are a full handful, slightly overflowing.

4. Prunes, 100 grams, are one handful.

5. Throw dense and dry dried fruits (apples, pears, etc.) into boiling water, bring to a boil again and cook for a couple of minutes. Then throw in softer or dried dried fruits (dried apricots, prunes, etc.), turn off the heat and let the brew steep under the lid until completely cool.

6. The finished brew can be served either strained in a glass, cup or mug as a drink, or with pieces of dried fruit in bowls, vases or simply in glasses as a dessert.
