Thai Banana Pancakes

Thai pancakes, unlike the pancakes we are used to, are not baked from liquid dough, but are rolled out from tough dough for frying.

I wrote that they roll out, but that's not quite true... Thai masters stretch the dough in the air with incredibly dexterous movements! If any of you already know how to stretch pizza dough by rotating, then you can handle the blanks for Thai pancakes. I couldn't do it, so I used a traditional rolling pin.

By the way, it's better to roll out the dough not on a floured surface, but on one greased with vegetable oil. This is done both to prevent excess flour from appearing and burning on the frying surface, and to roll out the dough as thin as possible and to make the pancake crispy when frying.

Dessert of Thai pancakes with bananas is a popular fast food, served with various sauces. In a home kitchen, it is easier to make pancakes with a smaller diameter, and use condensed milk and/or chocolate sauce as a sauce. Water - 0.5 cups

1. Knead the elastic dough manually or with kitchen equipment.

2. It is recommended to leave the dough for an hour at room temperature, covered to prevent drying. My dough lay for only 20 minutes...

3. Then divide the dough into small pieces. Roll each piece into a ball, for example, slightly larger than a walnut, and grease it with vegetable oil. In the photo there are fewer blanks, but it turned out to be twelve. Let the blanks lie for another 15-30 minutes.

4. Peel and cut the bananas into pieces. It is convenient to do this without removing one part of the peel, so that when cutting the banana across, its slices remain lying lengthwise on this peel.

5. On a surface greased with vegetable oil, thinly roll out each piece of dough.

6. Move the thinnest dough to a preheated frying pan with oil, but not very hot.

7. Place the banana filling in the center of the pancake.

8. Fold the edges of the pancake into an envelope.

9. Turn over and fry a little on the other side.

10. Thai pancakes with banana are ready.

11. Pour condensed milk over them and, if desired, chocolate sauce or melted chocolate. Serve immediately.
