Thai Fried Rice

I present to your attention Thai fried rice. A little over a month ago I returned from Thailand, and my memories of Thai cuisine are very fresh.

Rice is the main dish in Thailand, and it is cooked everywhere: both in street cafes and in expensive restaurants. Thais do not eat bread, instead they have rice. Most Thai dishes are made from rice or rice noodles. To some extent, rice became our bread during our stay in this country, and we ate it every day.

Before frying rice, it is first boiled until done. By adding certain spices to the rice, as well as additional ingredients, we get not just fried rice, but real national dishes with their own characteristics. So, today we are cooking Thai fried rice "Kau pad".

To prepare the dish, prepare all the products according to the list. It is advisable to use "Jasmine" rice, but if you don't have it, you can take another variety. Fish sauce should also be added to the rice, but alas, I did not find any, so I only added soy sauce.

Long grain rice - 1 cup

Egg - 2 pcs.

Soy sauce - 2 tbsp.

Fish sauce - 3 tbsp.

Onion - 1 pc.

Garlic - 2 cloves

White pepper - to taste

Chili pepper - 1 pc.

Vegetable oil - to taste

Lime - 1 pc.

1. Rinse the rice well until the water it will be cooked in becomes clear. It is better to cook the rice in advance.

2. Break the eggs into a bowl, add 2 tbsp. soy sauce (and fish sauce, if you managed to get it) and beat well. In general, all the products that you are going to add to the rice should be prepared in advance, since adding the products happens very quickly, and while frying the rice there will be no opportunity to chop anything.

3. Chop the onion, garlic and chili pepper. I used dried pepper. Heat the sunflower oil in a frying pan and pour in the egg mixture, then the onion, garlic and pepper. Mix thoroughly.

4. Add the cooled boiled rice here and mix well again. Add another 2-3 tbsp. soy sauce. Pepper the rice.

5. Fry the rice for 10 minutes, stirring constantly over medium heat. Thais use a wok for this purpose. At the end, pour lime juice over the rice.

6. Sprinkle the finished Thai fried rice with herbs if desired.
