Cholera - Swiss Vegetable Pie

Cholera is a vegetable pie with leeks, potatoes, cheese and apples from the canton of Valais (or Wallis) in Switzerland.

Cholera is prepared in different ways, depending on the region and personal preferences. Most recipes include the following ingredients: shortcrust pastry or puff pastry and a filling of leeks, potatoes, cheese and apples. Other versions also add onions and other vegetables, pears and bacon to these ingredients.

The dough is rolled out to a thickness of about 2 mm and placed in a baking pan. In some recipes, the dough that protrudes beyond the pan is simply formed into a rim (not like a biscuit). In other recipes, the dough is divided into two parts, the second part is used as a "lid". Baking time is about 40-60 minutes, depending on the recipe, at a temperature of about 200 ° C.

There is no single opinion or reliable evidence about the origin of the name "cholera". One explanation is that during the cholera epidemic of 1830, there was a ban on leaving the house due to the risk of cholera infection, so people were forced to cook food from the products that were in the pantry or in their own garden at the time. So, in principle, each of us, one way or another, has already cooked "Russian cholera" - a pie made from leftovers. Today I tried to cook Swiss.

Ингредиенты

Puff pastry – 2 packs (550 grams);

Potatoes – 6 pcs.;

Apple – 2 pcs.;

Pear – 2 pcs.;

Leek – 100 grams;

Dry-cured ham – 150 grams;

Cheese – 150 grams;

Yolk – 1 pc.;

Vegetable oil – 1 tbsp.

1. Cut the leek into rings and fry briefly in vegetable oil until soft.

2. Cut the ham into cubes and also fry briefly.

3. Boil the potatoes in their skins, cool, peel and cut into slices, you can (and even better) grate them.

4. Grate the cheese.

5. Cut the pears into small pieces.

6. Lastly, cut the apples into the same pieces so that they do not have time to turn black.

7. Unfold the finished dough. I cut it into two parts to get two separate portions, but you can do without it.

8. Put the potatoes in the first layer.

9. The second layer is apples.

10. The third layer is pears.

11. The fourth layer is leeks. You can also take regular onions or both at the same time.

12. The fifth layer is ham. For vegetarians, of course, without it.

13. And the last sixth layer is grated cheese.

14. Cover all the layers with loose dough, thus forming 2 small pies.

15. Place on a sheet and coat with yolk, you can do without it, but when coated, the dough gets a beautiful brown color during baking.

16. Bake in an oven preheated to 150-180 degrees for 20-30 minutes (this is my case) until the dough is ready.
