Portuguese Spinach with Chickpeas

Today we are cooking Portuguese spinach with chickpeas - a very tasty and filling dish, and also healthy!

I cook this dish often, because you can use canned chickpeas for it and I always have them at home, and you can take either fresh or frozen spinach, which increases the chances of this dish in terms of the possibility of its year-round preparation. And even radishes, which, in principle, you can do without, are already available in supermarkets all year round! I think I have convinced you that this dish is healthy and worth adding to your cookbook.

Ингредиенты

Spinach - 400 g

Canned chickpeas (boiled) - 250 g

Vegetable oil - 1 tbsp

Dried ginger - 0.5 tsp

Garlic - 1 clove

Radish - 2-3 pcs

Ground paprika - 0.5 tsp

Salt - to taste

1. Rinse the spinach under running water to remove sand, dirt particles and other debris. Chop the spinach leaves if you have fresh spinach. Boil water in a saucepan, add a pinch of salt. Place the spinach in boiling water and cook for 2-3 minutes.

2. Drain the spinach and discard it in a colander.

3. Peel the garlic and cut into thin slices. Wash the radish, trim the ends and also cut into thin circles.

4. Heat vegetable oil in a frying pan. Add red paprika powder, garlic slices and fry everything for 2-3 minutes - the garlic should brown, but not burn!!

5. Then add boiled or canned chickpeas to the pan.

6. Add some dried ginger. Fry the chickpeas with spices for a couple more minutes, stirring.

7. Then put the blanched spinach in the pan with the chickpeas.

8. Add the chopped radish, simmer the dish for another 2-3 minutes, the radish should stew slightly and become soft. Taste the finished dish for salt, add more salt if necessary.

9. Portuguese spinach with chickpeas is ready! Serve the dish hot, sprinkled with lemon juice!
