Portuguese Pastéis with custard filling

Today I want to share a recipe for incredibly delicious Portuguese custard tarts, or as they are also called, Pastéis tarts.

They are popular all over the world, prepared and served in many restaurants and pastry shops, but the signature recipe is kept a closely guarded secret. They say that the real Pasteis can only be tasted in Portugal in a place called Belem.

But before we get to Portugal, let's make these pastries at home. They are easy to prepare and quite quick. They are made using puff pastry and custard, which is rich in the aromas of lemon zest and cinnamon. It would take a long time to describe their excellent taste, but it's better to try them once. So let's get started.

Yeast-free puff pastry - 700 g

Milk - 300 ml

Sugar - 200 g

Wheat flour - 35 g

Water - 130 ml

Egg yolks - 4 pcs.

Cinnamon - 1 stick

Lemon zest - 1 tbsp.

1. Prepare the necessary set of ingredients.

2. First, prepare the custard. Pour 200 ml of milk into a small saucepan, add a cinnamon stick and lemon zest. You can grate the zest or carefully cut it off the lemon with a knife. The main thing is that the peel is without the white part, otherwise it will be bitter. Put the saucepan on the fire and bring to a boil.

3. Pour the remaining milk (100 ml) into a separate bowl and add flour.

4. Mix thoroughly to avoid lumps.

5. Pour the flour mixture into the boiling milk in a thin stream. Stir constantly, cook for about 1 minute, until thickened, then remove the saucepan from the heat.

6. Separately cook the sugar syrup. Pour water into a saucepan or small saucepan and add sugar.

7. Without stirring, put on the fire. Bring to a boil and simmer for 3 minutes.

8. Pour the hot syrup into the milk and flour mixture in a thin stream, stirring constantly with a whisk.

9. The custard is almost ready. Strain it through a sieve to remove any lumps, lemon zest and cinnamon.

10. Cover the cream tightly with cling film to prevent a crust from forming and cool to room temperature. Add the egg yolks to the warm cream and mix well. The custard for Portuguese Pasteis cakes is ready.

11. Roll the puff pastry into a roll. I had 4 sheets, which I rolled separately.

12. Cut into circles 1.5-2 cm thick.

13. Place the dough in muffin tins, distribute it with your hands, forming the bottom and walls. If you have metal molds, then you need to grease them with butter beforehand. Silicone ones do not need to be greased with anything.

14. Fill the molds with cream, leaving about 5 mm from the edges (as in the photo). The cream will rise very much during baking.

15. Bake for 20-25 minutes in an oven preheated to 250 degrees. Baking time depends solely on your oven. The dough should be baked and golden brown, and the cream should thicken and brown.

16. Very tasty Portuguese pasties with custard are ready. From the specified amount of ingredients, I got 20 small-sized pastries.

17. Take them out of the molds, cool a little, and you can taste them. Serve them warm or chilled with a cup of aromatic tea.
