Korean Enoki Mushrooms

They are also called winter honey fungus, golden threads or needles, enokitake, inoki. Enoki mushrooms are widely used in Korean, Chinese and Japanese cuisines. They are cultivated in Asian countries on an industrial scale, added to soups and hot dishes.

Enoki can be eaten raw, but a little heat treatment is recommended for better absorption. Rice is an excellent side dish, for satiety you can add meat or chicken, but in this case add the mushrooms 5 minutes before readiness. You can buy them in supermarkets in the department with fresh mushrooms and pickles in small packages.

Scientists have found that winter honey fungus produces flammulin - a substance active against sarcoma.

Enoki mushrooms - 500 g

Garlic - 3 cloves

Green onions - to taste

Vegetable oil - 2 tbsp

For the sauce:

Soy sauce - 4 tbsp

Oyster sauce - 2 tbsp

Sesame oil - 1 tsp

Tomato paste/ketchup - 1 tsp

Sugar - 1 tsp

Water - 100-150 ml

1. First, you need to cut off the root system, this is about 2-3 cm.

2. Then divide into smaller bunches.

3 Rinse under running water and leave to drain. At this time, you can prepare the sauce.

4. For the sauce, mix: soy sauce, oyster sauce, sugar, sesame oil, tomato paste or ketchup and water.

5. Mix well until the sugar dissolves. The sauce is ready.

6. Cut the garlic into small cubes.

7. Fry the chopped garlic in heated vegetable oil for a couple of minutes, until lightly browned, over medium heat.

8. Put the mushrooms on top of the garlic, distribute evenly over the pan.

9. Pour in the sauce. After a few minutes, when the mushrooms have softened, drown them in the sauce with a wooden spatula - all the mushrooms should be in it. Cook for 5 minutes over medium heat without a lid. 10. Serve the Korean-style enoki mushrooms hot, sprinkled with green onions.
