1. Usually, they are prepared one by one, one candy at a time. Use small heat-resistant metal containers, stir the sugar with wooden sticks (less caramel sticks to thin tools).
2. It is also convenient to use a wooden spatula (its reverse end) from improvised means. My containers are a cocotte maker, a milk jug, I have tried both options. If you have enough skills in cooking Korean candy, you can work with a small vessel. If you have little experience, I recommend a deep milk jug. There will be a lot of caramel loss on the walls, but stirring (and this is a long process) is much easier.
3. Load a portion of sugar into a container, put it on the fire and stir continuously with a stick. Adjust the temperature so that the melting occurs gradually and evenly.
4. Sugar grains will begin to collect in large crumbs, colored in a caramel shade. Do not stop stirring.
5. Completely melt the sugar until a homogeneous viscous liquid-caramel. Move away from the heat, but do not let the caramel cool down, then act quickly.
6. Throw in a pinch of soda. The reaction will start immediately - the hot caramel will foam.
7. Quickly whisk until thick foam. The caramel will become lush, light, without transparency, saturated with small bubbles. If the mass is still poorly mixed and is already hardening, heat it up additionally.
8. Pour the foamy candy mass onto a silicone mat or parchment. Since the substance cools and hardens very quickly, I recommend putting a heated frying pan or baking sheet under it - this will prolong the cooling time of the Dalgona sugar candy.
9. Press down, forming a circle. Of course, the shape can be different.
10. If desired, pierce the still hot candy with a stick, like a lollipop, press figures in the center. Dalgona sugar candies are ready.
