Kimchi Tige - Korean Soup

I think my goal is to try solyanka of all national cuisines... Kimchi Tige soup is a real Korean solyanka!

Pork – 150 g

Water – 200-250 ml

Kimchi cabbage – 100 g

Tofu – 50-70 g

Onion – 30 g

Kimchi marinade – 1 tbsp

Garlic – 1 clove

Paprika, chili – to taste

Additionally:

Honey – 0.5-1 tsp

Sesame oil/sauce – up to 1 tsp

Fresh herbs – for serving

1. Fatty pork should be cut into pieces and fried for about five minutes so that the meat is sealed and then there is no scale in the soup, and also for a more impressive taste. If there are any soybean pastes mentioned in the introduction, then add them at the very end of frying for about one minute. Or sprinkle with paprika, red pepper and / or chili.

2. If necessary, cut the kimchi into pieces convenient for use in the soup.

3. Put the prepared pork on the bottom of the pan, add sesame oil or sesame sauce, honey or sugar, pieces of garlic, chopped onion, and kimchi on top, pour in hot water and marinade from the kimchi.

4. Do not stir. Cook on a low boil for about half an hour. At the end, five minutes before readiness, add tofu, cut into cubes or bars, to the pan. 5. Serve Kimchi Tige soup with fresh herbs (onion, cilantro, parsley).

6. I made myself one serving to get acquainted with this Korean solyanka, I realized that I liked it and will repeat it. I also need to try serving it with rice. The tea set in the photo is my first reward for the culinary competition, and then there were dozens of them.
