Cold Chicken with Olives and Lemon

It can be mixed with different vegetables, cooked with yogurt and spices, as in India, or in a spicy tomato sauce, as in Mexico. This version is similar to the Soviet salad "Stolichny", but with an Italian accent. Lemon slices are responsible for the refreshing function, mayonnaise adds satiety, and olives add character. But in no case should you forget about balance, it is better not to let any ingredient prevail over the others - the acidity of the lemon is balanced by the sauce, lemon zest and the cold chicken pulp itself. If desired, all this can be turned into a pate, with a piece of good bread you will get a light and quite satisfying snack.

Baked chicken meat 400 g

Olives 100 g

Lemon 2 pieces

Egg yolk 2 pieces

Olive oil 150 ml

Salt to taste

Ground black pepper to taste

Green basil to taste

1. Some olives, preferably different colors, should be pitted and finely chopped.

2. Beat the egg yolks with a pinch of salt in a deep bowl, then add olive oil in a thin stream to create mayonnaise. Squeeze some lemon juice into it and mix in finely chopped olives, salt and pepper.

3. Separate the chicken meat into fibers, mix with the zest of 2 lemons, lemon slices, the remaining olives and mayonnaise. Salt and pepper. If you have herbs, they will also work, basil is especially good.
