Stew with chicken, zucchini and sour cream

Chicken fillet - 500 g (2 pcs.)
Zucchini (young) - 250 g (1 pc.)
Carrots - 70 g (1 medium-sized)
Red bell pepper - 60 g (1 pc.)
Tomatoes - 180 g (2 pcs.)
Sour cream with 20% fat content - 150 g
Ground black pepper - 0.25 tsp (to taste)
Salt - 0.5 tsp (to taste)
Vegetable oil - 30 ml (2 tbsp.)
Parsley (for serving) - a few sprigs

1. Peel the carrots and bell peppers, cut off the ends of the zucchini. Wash and dry the vegetables and greens.
2. Wash the chicken fillet and cut into small cubes
3. Heat a frying pan with vegetable oil, put the chicken meat and fry, stirring, over medium heat for about 8-10 minutes, until browned.
4. Cut the zucchini into small cubes.
5. Cut the tomatoes into small pieces.
6. Cut the pepper into thin strips, the carrots into strips.
7. Send all the chopped vegetables to the pan with the chicken, stir, fry over medium heat for 10 minutes.
8. Add salt and ground pepper.
9. Then add sour cream.
10. Stir the contents of the pan, cover with a lid. Reduce heat to the lowest setting and simmer chicken and vegetables for about 20 minutes (or until vegetables are as soft as you like).
11. The chicken, zucchini and sour cream stew is ready.
