Avocado is a rather unusual ingredient for soup, but its texture and neutral taste make it a great base for this refreshing summer dish. Thanks to its high content of healthy fats, avocado saturates the body, but at the same time does not give a feeling of heaviness in the stomach, typical of many other first and second courses.
Coconut milk, in turn, gives the soup a special softness and creaminess, harmoniously combining with the velvety consistency of avocado. But lemon juice is responsible for the bright note of freshness, which successfully sets off the main tastes.
The recipe for this cold soup is quite simple and does not take much time. To prepare it, you only need a few basic ingredients: avocado (4 pieces), onion (1 piece), lemons (2 pieces), 400 ml of broth and 300 ml of coconut milk. Salt and pepper are added to taste.
First, cut the avocado and onion into small pieces, then thoroughly whisk all the ingredients in a blender. Then pour the broth and coconut milk into the resulting homogeneous mass, and whisk everything again. The finishing touch is adding lemon juice, salt and pepper.
The finished cold soup should be placed in the refrigerator for 1-1.5 hours so that it cools well before serving. If desired, you can additionally decorate the portion with fresh mint leaves, which will emphasize the refreshing notes of the dish.
This soup perfectly copes with the role of a light, but at the same time nutritious first course on hot summer days.
