I stopped liking store-bought gingerbread, but sometimes I had to buy it for my child. These gingerbread cookies will forever "settle" in my culinary piggy bank. I don't even see the point in looking for new recipes. It's easy and quick to make these gingerbread cookies, just let the dough sit in the refrigerator for 2 hours - well, let it sit, nothing is required of us! Soft and very chocolatey, delicious and with beautiful cracks. I regretted that I made half a portion. To make gingerbread cookies with chocolate, you must take good quality chocolate, I used dark chocolate.
Gingerbread with chocolate

Butter - 40 g
Chicken egg - 1 pc.
Wheat flour - 110 g
Cocoa powder - 1 tbsp.
Dark chocolate - 90 g
Sugar - 60 g
Baking powder - 1/3 tsp.
Icing sugar - for sprinkling

1. Melt chocolate and butter in a water bath or microwave.
2. Mix cocoa powder, flour and baking powder in a bowl.
3. Beat egg and sugar until white foam.
4. Add cooled butter and chocolate to the egg mixture. Mix with a spatula.
5. Pour in dry ingredients. Mix. Cover the dough and put in the refrigerator for 2 hours.
6. Form small balls from the dough with your hands, roll in powdered sugar. Place on a baking sheet with a silicone mat or lined with baking paper. Press down slightly on top with a glass.
7. Bake gingerbread with chocolate at 165 degrees for 10-12 minutes. Cracks should form, and the dough inside will look raw - that's how it should be.
