Dumpling soup like in kindergarten

The children's menu should be not only healthy, but also tasty, so the dishes are prepared according to strict recipes, one of them is soup with dumplings.

It is not for nothing that soups with dumplings are prepared for children in kindergartens, because almost every child eats this soup with pleasure. There is nothing extra in it, only healthy and low-fat chicken broth, potatoes, lightly sautéed vegetables and, in fact, the dumplings themselves.

If the child does not really like onions and carrots in the soup, then the onion can be cut very finely, and the carrots can be grated on a fine grater, then sautéed so that they are in no way fried, the onion from such processing will become almost transparent and sweetish in taste, the child will not even notice it in the soup. But if your child is a real pest and tries to fish everything out of the soup, then in order not to deprive the broth of flavor, boil a whole carrot in it, which then simply remove from the broth, you can do the same with the onion.

But these are already digressions, because after all, for feeding children in kindergartens there have always been strict recipes for each dish, where the list and quantity of each ingredient were prescribed in technological maps, and the cook who prepares food for children is always obliged to strictly adhere to them. Therefore, in this recipe, we will recall the recipe for soup with dumplings according to the technological map.

Usually, the amount of products in the map is indicated for one serving of the dish, in this case, soup, but since we need to prepare soup not for one child, but for a family of several people, we will increase the amount of products for the soup proportionally to the number of eaters. The list of products for this recipe indicates the amount of each ingredient based on five servings of soup with dumplings as in kindergarten.

Chicken broth - 1.3 l

Potatoes - 400 g

Carrots - 50 g

Onions - 50 g

Vegetable oil - 10 g

Butter - 10 g

Chicken egg - 1 pc.

Wheat flour - 60

Greens - 15 g

Salt - 1/2 tbsp.

1. Since we have already cooked the chicken broth for the soup, we can start cooking the soup. Put the pot of broth on the fire, and while it is heating up, peel the potatoes.

2. Cut the peeled potatoes into cubes.

3. Then peel a small onion and the required amount of carrots. In order to comply with the recipe and weight of each product, you will have to use scales, but I think this is obvious.

4. Immediately finely chop the onion and carrots into thin strips.

5. Heat the vegetable oil and butter in a frying pan.

6. First, sauté the onion in oil until transparent.

7. Now add the carrots to the frying pan and continue sautéing over low heat.

8. Meanwhile, as soon as the broth has boiled, put the chopped potatoes in it and cook over medium heat.

9. This is what the vegetables should look like after sautéing. Remove the pan from the heat.

10. While the potatoes are cooking, you can make the dough for the dumplings. To do this, break a chicken egg into the flour.

11. Mix the egg with the flour, add a little chicken broth so that the dough has the required consistency. The dough should be viscous and not steep. You will need very little broth, about 1-2 teaspoons.

12. As soon as the potatoes are ready, you can put the dumplings in the soup. To do this, hold a teaspoon in the hot broth for a while, immediately scoop up some dough and drop it into the soup. Do this quickly and try not to scoop up a lot of dough so that the dumplings are small in size.

13. The dumplings cook very quickly: as soon as they float to the surface, they can be considered ready. And while they are cooking, quickly chop the greens for the soup finely.

14. As soon as the dumplings float to the surface, add the sautéed onions and carrots to the soup and stir.

15. Do the same with the chopped greens.

16. At the very end, add salt, stir and turn off after a minute. The soup with dumplings like in kindergarten is ready.

17. Let the soup sit for about half an hour, and after that it can be poured into bowls. You can also add chicken meat to the soup, which you used to cook the chicken broth. But this is up to you. Enjoy your meal.
