This dish can be based on almost any salad, but it is decorated in a standard way - with crispy potatoes and eggs. Potatoes can be cut into long strips and fried in a frying pan, or you can make potato straws - potato Pie. I like the second option more, with such potatoes the salad looks unusual and impressive. Its appearance will decorate any festive table. The salad turns out to be satisfying due to meat products and incredibly tasty. I recommend trying it.
Salad "Capercaillie's Nest" with tongue

Vegetable oil - 250 ml
Pickled cucumbers - 4 pcs.
Pork tongue - 1 pc.
Pork - 200 g
Eggs - 4 pcs.

1. Let's prepare fried potatoes, the so-called Pai potatoes. They will be the basis of our salad and will become its decoration. Peel and wash the potatoes. Then grate them on a Korean carrot grater.
2. Rinse the potatoes in cold water 2-3 times until it is transparent. We need to wash out the starch.
3. Drain the water and lay the potatoes in an even layer on a towel to remove excess moisture.
4. Pour vegetable oil into a small saucepan and heat it well. Fry the potatoes in portions, in several stages, stirring occasionally. Fry over medium heat for about 3-4 minutes, until a beautiful golden color.
5. Place the finished potatoes on paper so that it absorbs excess fat. Salt to taste.
6. Boil the pork in salted water in advance until done, the cooking time will depend on the age of the animal. The finished meat should be easy to pierce with a knife or fork. Wash the tongue well (I cooked with pork tongue) and also boil until done. It takes a long time to cook, 1.5-2 hours, depending on the size. Immediately pour cold water over the finished tongue and remove the skin. Cool.
7. Cut the cooled meat and tongue into cubes.
8. Boil the eggs hard and separate into yolks and whites.
9. Cut the whites into cubes.
10. Add a little mayonnaise, a sprig of chopped dill and salt to the yolks.
11. Mash with a fork.
12. Roll small balls from the resulting yolk mixture.
13. Cut the pickles into cubes. Drain the liquid from the canned peas.
14. Combine all the ingredients in one bowl. Add a handful of potatoes. Salt the salad and season with mayonnaise. Mix.
15. Put the salad on a flat plate in a mound, make a small depression in the center.
16. Cover the salad with potato strips on top and on the sides.
17. Put dill sprigs and eggs, which we prepared from the yolk mass, in the center.
18. A very tasty and beautiful salad "Capercaillie's Nest" with tongue is ready. Serve immediately after cooking, while the Pie potatoes are not soft. Enjoy your meal!
