Coconut milk pudding with exotic fruits

400 g coconut milk or cream
500 g assorted fruits (mango, grapes, kiwi, strawberries, lychee), canned
100 g honey, agave or Jerusalem artichoke syrup
zest of 2 limes
juice of 2 limes
8 g agar-agar
1 sprig of mint for decoration
pomegranate seeds for decoration

Step 1
Pour coconut milk into a saucepan, add half of the honey, lime juice and grated zest, pour in agar-agar and place on low heat, stirring, bring to a boil and cook for 2 minutes. Strain the finished mixture through a fine sieve.
Step 2
Divide the mixture into bowls and refrigerate for 4-12 hours.
Step 3
Cut the fruit into small pieces and arrange on the hardened pudding.
Step 4
Pour over the remaining honey, garnish with mint and pomegranate seeds.
