Grilled chicken with quinoa, feta and sweet pepper salad

quinoa 1 cup
feta 70 g
roasted red bell pepper 1 pc.
tomatoes 1 pc.
pitted olives 1 handful
red onion ½ pc.
red chili pepper ⅓ pc.
garlic 1 clove
green onion 3 stalks
tarragon 3 sprigs
mint 3 sprigs
olive oil 3 tbsp.
butter 1 tbsp.
vinegar 1 tbsp.
freshly ground black pepper ¼ tsp.
sea salt ½ tsp.

1. Salt and pepper the chicken fillet, sprinkle with olive oil on all sides and fry in a preheated grill pan until done
2. Peel the garlic, grate on a fine grater, lightly salt, pepper and grind together with butter, then turn off the heat, put on the finished chicken and let stand.
3. Peel the red onion, finely chop and put in a bowl, then pour in vinegar and let stand.
4. Thinly slice the green onion diagonally, chop the mint and tarragon with a knife.
5. Finely chop the chili pepper, remove the seeds.
6. Remove the excess liquid and seeds from the tomato, cut into small pieces.
7. Cut the baked pepper into cubes.
8. Finely chop the olives.
9. Place chopped tomatoes, herbs, chili, bell pepper and olives in a bowl with onions in vinegar.
10. Cut feta into cubes.
11. Boil quinoa according to package instructions, then transfer to a deep salad bowl, add vegetables, feta, drizzle with olive oil, salt and mix, place chicken on top and drizzle with oil from the pan.
