Eggplants have long occupied a place of honor in Russian and European cuisine.

And yet, their historical homeland is not Europe, but India. There, they learned to grow and cook this vegetable one and a half thousand years ago. Only in the 15th century, eggplants first appeared on the European table. They were loved for their pleasant, slightly spicy taste and numerous useful properties. Eggplants are marinated for the winter, added to salads, fried, baked in the oven, stuffed with mushrooms or meat, used to make caviar and sauces. You can also quickly and easily make interesting snacks from them. We are sharing a recipe for one of them: we cook eggplants with sour cream and herbs, and the vegetable will taste like mushrooms.

eggplants 2 pcs.
sour cream 20% 150 g
garlic ½ head
onions 2 pcs.
dill 3 sprigs
ground red paprika to taste
vegetable oil to taste
salt to taste
pepper to taste

1. Start cooking by peeling the eggplants. To peel them thinly and neatly, use a special vegetable peeler.
2. Peel the onion. Rinse it in cool water, then cut into large pieces. The larger, the better.
3. Put sour cream and finely chopped greens in a dry, clean container. Add pepper, paprika and finely grated garlic. There should be a lot of garlic. Salt and mix everything thoroughly.
4. Put the dressing of greens and sour cream in the vegetables. Simmer the dish over medium heat for 3-4 minutes. But do not overdo it, so that the eggplants do not turn into puree.
5. After turning off the stove, the appetizer can be immediately placed on plates and served. It will also remain no less tasty when cold. Store the dish in the refrigerator overnight.
