Zucchini, carrot and cottage cheese spread for sandwiches

Super summer zucchini recipe. Juicy and healthy addition to bread (or crispbreads) for breakfast, lunch or dinner. A great alternative to fatty sandwiches with butter and cheese in the heat.

First, stew the zucchini with carrots and onions in oil. This can be done in advance so that the stew has time to cool before preparing the spread itself. And the second step is to beat the vegetables with cottage cheese, garlic and fresh parsley in a blender. Garlic and parsley are ingredients that can be used to your taste. Dill and basil will do instead of parsley, but be sure to add fresh herbs for juiciness and "greenness" of the dish. Serve the finished spread immediately or cool it a little. And to make the sandwiches even tastier, dry the bread in a toaster or in a dry frying pan. Hot slices and cold vegetable pate are a great combination.

Zucchini – 400 g (2 pcs.)

Carrot – 70 g (1 pc.)

Onion – 60 g (1 pc.)

Vegetable oil – 1 tbsp.

Cottage cheese – 220 g

Garlic – 1 clove

Fresh parsley – 30 g

Salt – to taste

1. Peel the zucchini. You can leave the seeds. Wash and cut into small cubes

2. Peel and cut the onion and carrot into small cubes.

3. Place in a frying pan with vegetable oil and sauté for 2-3 minutes over medium heat.

4. Add the zucchini, salt, stir, cover with a lid and simmer for about 10 minutes until the vegetables are soft, reducing the heat. Then transfer the mixture to a plate and cool.

5. Combine the cooled vegetable stew in a convenient bowl with cottage cheese, garlic and parsley.

6. Blend with an immersion blender until smooth. Taste and add more salt if necessary.

7. Place in a serving dish. Garnish with seeds and fresh herbs to taste.

8. The zucchini, carrot and cottage cheese spread is ready! Serve with fresh bread or make sandwiches right away. Enjoy!
