A yolk in a cloud of whipped whites - this is a dish called "Eggs Orsini". And in this recipe, it also has mushrooms, cheese and green onions! With such a creative and very tasty scrambled egg, breakfast will bring you a lot of pleasure!
Scrambled eggs "in the clouds" with mushrooms, cheese and green onions

Eggs - 3 pcs.
Champignon mushrooms - 75 g
Parmesan cheese - 20 g
Green onions - a few feathers
Sunflower oil - 0.5 tbsp.
Salt - to taste

1. Peel the mushroom caps and clean off any dirt from the stems. Cut the mushrooms into small cubes.
2. Heat some sunflower oil in a frying pan and fry the mushrooms over high heat for about 2-3 minutes.
3. Grate the Parmesan cheese on a fine grater.
4. Wash and finely chop the green onions. Preheat the oven to 220 degrees.
5. Separate the eggs into whites and yolks. Pour the whites into a bowl and place the yolks either in different containers or on the same plate, but so that they do not touch. Try not to damage the film of the yolks, they should be whole.
6. Add a pinch of salt to the whites and beat until stiff peaks form.
7. Add mushrooms, cheese, green onions and ground black pepper to the whipped egg whites.
8. Gently stir the additives into the egg whites with a spatula so that the mixture remains airy.
9. Cover the baking sheet with a silicone mat. Place the egg whites on it in the form of "nests" with indentations in the center.
10. Put the baking sheet in the oven and bake the egg white "clouds" at 220 degrees for 3 minutes.
11. Remove the baking sheet from the oven and place a yolk in each indentation.
12. Put the baking sheet back in the oven and bake the Orsini eggs for another 2 minutes. The yolk should be covered with a film, but remain liquid inside.
13. The scrambled eggs "in the clouds" are ready.
14. Carefully arrange the Orsini omelette with mushrooms and cheese on plates and serve immediately. Enjoy!
