1. Wash and dry the vegetables.
2. Heat the frying pan, pour in the vegetable oil. Finely chop the onion, fry for a few minutes.
3. Then chop the bell pepper, add to the onion, fry for 3-4 minutes.
4. Next, chop the tomato, add to the vegetables and fry for another 3-4 minutes.
5. Chop the green onions and parsley and add to the frying pan with the vegetables, cook for 3 minutes.
6. Crumble the feta cheese, add to the frying pan and cook everything together for 2-3 minutes.
7. At this time, beat the eggs, pour into the frying pan, carefully mix the contents, add salt, pepper, cover with a lid and cook the omelette with cheese (feta cheese) and vegetables over low heat until the desired consistency. (I like my omelette fully cooked.)
8. Serve mish-mash - a Bulgarian omelette with tomatoes, peppers and feta cheese - right in the pan.
