Chicken in orange sauce

Orange chicken is one of the most famous Chinese dishes in the world.

This recipe is as close as possible to the original taste of the dish, without including any hard-to-find products. Thanks to the crispy breading in which the fillet pieces are fried, the sauce perfectly envelops the chicken and stays on it. The chicken meat turns out rich, juicy, with a bright citrus flavor.

Chicken fillet - 500 g (2 pcs.)

Eggs - 2 pcs.

Orange juice - 200 ml

Soy sauce - 50 ml

Brown sugar - 2 tbsp.

Orange (for zest) - 180 g (1 medium)

Fresh ginger (root) - 20 g

Garlic - 2 cloves

Starch - 100 g (5 tbsp.)

Flour - 100 g (6-7 tbsp.)

Ground red pepper - 1/3 tsp.

Vegetable oil - 45-60 ml

Green onions (for serving) - 1-2 pcs.

1. Wash the chicken fillet, dry it and cut it into small cubes. Peel the garlic and ginger root and grate it on a fine grater. Wash the orange thoroughly and dry it. Remove the zest from the orange with a special knife or a fine grater.

2. Break the eggs into a deep plate and mix with a fork until smooth. Pour all the flour and 4 tablespoons of starch into different plates. Roll each piece of fillet in flour on all sides.

3. Then dip each piece of chicken breaded in flour in the egg mixture.

4. And roll in starch on all sides.

5. Heat vegetable oil in a frying pan and place the breast pieces at a distance from each other (in one layer). Fry on high heat for 5-6 minutes on one side until crispy.

6. Turn the pieces over and fry for another 3-4 minutes.

7. Place the fried fillet on a plate lined with a paper towel or a clean napkin to absorb all the excess fat. Then fry the other batch of fillets. Prepare all the fillets in this way.

8. For the sauce, combine orange juice, chopped garlic and ginger, brown sugar, soy sauce and ground red pepper in a deep frying pan or saucepan.

Pour 60-70 ml of cold water into a glass, dilute 1 tbsp. starch.

9. Put the frying pan on the fire and heat the contents until boiling. Shake the starch solution, add to the frying pan and stir; heat for another 1 minute until the sauce thickens.

10. Put all the pieces of fried fillet into the resulting sauce, heat for 1-2 minutes.

11. Stir. Add orange zest, stir again and remove the pan from the heat.

12. Chicken in orange sauce is ready. Put on a plate or dish, sprinkle with finely chopped green onions or sesame seeds. Boiled rice will be delicious as a side dish.
