Zucchini Fritters with Feta and Spinach

Spinach and feta cheese complement the zucchini perfectly, giving the pancakes a sophisticated taste and satiety without weighing down the dish.

Zucchini Fritters with Feta and Spinach

Ингредиенты

Young zucchini - 310 g

Feta cheese - 100 g

Spinach - 30 g

Egg - 1 pc.

Flour - 80 g (about 3 tbsp)

Salt - 1/8 tsp (to taste)

Ground black pepper - 1/8 tsp

Dried Mediterranean herbs - 1/2 tsp

Vegetable oil - 45 ml (3 tbsp)

1. Grate the zucchini on a coarse grater.

2. Place the grated zucchini in a bowl. Add salt. Let sit for 5 minutes.

3. Cut off the tough stems from the spinach. Finely chop the greens.

4. Crumble the feta with a fork.

5. Squeeze the zucchini to remove any juice.

6. Add the spinach and feta to the bowl. Beat in the egg. Add ground pepper, dried herbs and flour.

7. Mix everything well.

8. Heat the vegetable oil in a frying pan. Using a tablespoon, spoon the zucchini mixture into the pan, shaping it into pancakes. Fry for 3 minutes on the lowest heat.

9. Then turn over and fry for another 2-3 minutes, until golden brown.

10. Zucchini fritters with feta and spinach are ready to serve. You get 9 pieces in total.
