Honestly, I didn’t think that it was possible to come up with something like this, and that it would be tasty. Oatmeal pancake is oatmeal disguised in an omelette, that’s how I would describe it. And this is probably the ideal dish for breakfast. Nourishing – one, fast – two, tasty – three! The list can go on.
Oatmeal pancake with cheese

Oatmeal - 2 tbsp
Eggs - 2 pcs
Milk - 3 tbsp
Cheese - 30 g
Salt, pepper - to taste
Vegetable oil - for greasing the frying pan

1. Combine eggs, salt and milk in a bowl. Mix everything with a fork or whisk until smooth.
2. Next, add the oatmeal. I used 10-minute oats. They are perfect. You can use even finer ones. Mix and leave aside for 5-7 minutes.
3. Meanwhile, prepare the cheese. Grate it on a fine grater. You can use more cheese - for satiety and taste, or less - for a more dietary option. Also, while the oatmeal is steeping, heat up a frying pan, greased with a drop of oil - to be sure that the oatmeal pancake does not stick. Or you can cook in a completely dry frying pan with a non-stick coating.
4. Add most of the grated cheese to the mixture. Mix and pour into the pan.
5. Bake the oatmeal pancake under the lid over medium heat until the eggs are ready. Then sprinkle the remaining cheese on top. Then you can fold the omelette in half or in four, or serve it open.
6. The oatmeal pancake with cheese is ready! Serve it hot, without wasting a minute. Enjoy!
