Pork ham with sausage

Cold appetizers take up a lot of space on the festive table. I suggest making a boiled pork loin with sausage. The recipe is not at all complicated and does not require supernatural culinary skills. The boiled pork loin can be prepared a couple of days before the festive feast. Take semi-smoked, smoked or dry-cured sausage - at your discretion.

Pork tenderloin – 1 kg

Sausage – 400 g

Sea salt – to taste

Ground black pepper – to taste

Ground coriander – to taste

Rosemary – 5 sprigs

Thyme – 10 sprigs

1. For the pork loin, take the pork tenderloin. First, rinse it well in cold running water. Dip it from all sides to remove excess moisture. Take a sharp knife and make a through hole in the center of the tenderloin so that a sausage stick can fit inside.

2. Peel the sausage from the casing and insert it into the through hole. If the sausage stick is too long, cut off the excess part, aligning it with the meat.

3. For spices, I use coarse sea salt, freshly ground black pepper and coriander. You can experiment with spices. Sprinkle the spices used on all sides.

4. Place fresh thyme and rosemary on the piece of meat. Secure with a thread.

5. Place in a deep baking dish. Cover with foil. Put in the oven for 40-60 minutes at a temperature of 180-190 degrees. After 40-50 minutes, remove the foil, pour over the resulting juice and put in the oven to brown the meat.

6. The pork loin with sausage is ready. Let the meat cool completely. Put it in the refrigerator, right with the threads. Before serving, remove the threads and cut into thin circles.
