Haddock baked in cheese sauce

Haddock fish, fillet without skin and bones - 1 kg
Milk - 300 g
Cheddar cheese (grated) - 120 g
Small onion (cut into strips) - 1 pc.
Bay leaf - 2 pcs.
Black peppercorns - 3-4 pcs.
Butter - 25 g
Flour - 25 g
Hot mustard - 1 tsp.
Salt - to taste
Ground black pepper - to taste

1. Place the fillets in a large saucepan, add enough water to just cover the fish. Add milk, onion, bay leaf and black peppercorns. Bring the mixture to a gentle simmer over medium-low heat.
2. Cover the saucepan and continue cooking the fish over low heat for about 5-8 minutes. Carefully remove the fish from the pan and place on a plate. Break the flesh into pieces with a fork, strain the broth.
3. Turn on the oven with the "top grill" function to preheat. Prepare the sauce. Heat the butter in a saucepan, pour in the flour and cook, stirring, for about 1 minute. Remove the saucepan from the stove, gradually add the strained fish broth. Place the saucepan over medium heat and cook, stirring, until the first air bubbles appear on the surface. Add mustard, 3/4 of the cheese, salt and ground black pepper to taste to the sauce. Remove from the stove.
4. Place the fish in the saucepan with the sauce, mix gently, and then transfer to a heat-resistant dish. Sprinkle with the remaining cheese. Place the dish under a preheated grill and cook until the top is golden brown.
