Fluffy Kazakh Baursaks

Flour – 350 g
Dry yeast – 5 g
Sugar – 1 tsp
Salt – 0.5 tsp
Milk – 200 ml
Vegetable oil – 25 ml + for deep frying

1. Mix yeast, sugar and warm milk. Leave for 10 minutes.
2. Add salt and butter to the dough.
3. Sift the flour and knead the dough.
4. The dough should be soft and not sticky.
5. Leave the yeast dough in a warm place for 60 minutes. Then knead.
6. Cover with a bowl and leave for 5 minutes.
7. Roll out the dough into a layer about 1 cm thick. Cut out circles, diamonds or squares.
8. Cover and leave to rise for 10 minutes.
9. Heat up enough vegetable oil for the baursaks to float in it. In heated (but not until smoking) oil, fry the baursaks on all sides until golden brown.
10. Place the finished baursaks on paper towels to remove excess oil.
