Mint Mojito Cookies

Flour - 2 cups
Butter or margarine - 150 g + for greasing
Icing sugar - 0.5 cups
Sugar - 1.5 cups
Eggs - 4 pcs.
White rum - 3 tbsp.
or rum essence - 3 drops
Mint leaves - 16 pcs.
Lime zest - 2 tsp.
Lime juice - 2/3 cup
Milk - 2 tbsp.
Salt - 0.25 tsp.
Food coloring - 2-3 drops

1. Chop the mint. Mix the rum and mint, set aside. Leave the butter at room temperature until softened. Preheat the oven to 180 degrees. Grease a 33x22 cm pan with butter.
2. Beat the powdered sugar and butter in a bowl with a mixer. Add 1.75 cups of flour, mix.
3. Put the dough in the pan, distribute evenly, press to the bottom. Bake for 22-25 minutes, until golden brown.
4. Meanwhile, beat the eggs and sugar in a bowl. Add the remaining flour and salt, mix until smooth. Add lime zest, lime juice, food coloring and milk.
5. Strain the rum with mint through a sieve. Squeeze out the leaves, discard them.
6. Pour the strained liquid into the egg mixture, mix. 7. Pour the mixture onto the cake. Bake for another 25-27 minutes.
8. Cool for 1 minute. Sprinkle with powdered sugar. Cut into 24 portions.
