In Russia, it is often seasoned with sunflower oil. Meanwhile, the original recipe uses a special vinaigrette dressing made from vinegar, olive oil and mustard. Vinaigrette is a word of French origin and comes from the word vinaigre - vinegar. The ratio of vinegar to oil is 1:3, that is, for one part vinegar we take three parts oil. You can use both strong and grain mustard. You can add parsley, tarragon, green onions, dill and other greens, as well as spices to the finished sauce. Wine vinegar can be replaced with lemon or lime juice. Olive oil is most often used, although any vegetable oil can be used.

Wine vinegar - 1 tbsp

Vegetable oil - 3 tbsp

Strong mustard - 0.5 tsp (or to taste)

Salt - 0.3 tsp

Ground black pepper - 0.3 tsp (or to taste)

For vinaigrette:

Beetroot - 1 pc. (80 g)

Carrots - 1 pc. (70 g)

Potatoes - 2 pcs. (100 g)

Pickled cucumber - 1 pc. (70 g)

Onions - 0.5 pcs. (35 g)

Salt - to taste

Pepper - to taste

1. Combine vinegar, mustard, salt and pepper.

2. Mix until smooth.

3. Pour in vegetable oil in a thin stream, whisking the mixture with a mixer or whisk. You can add a little sugar if desired.

4. The vinaigrette dressing with mustard and vinegar is ready. You can start making the vinaigrette. Prepare the ingredients.

5. Boil the potatoes, beets and carrots until tender. It will take us about 25-30 minutes from the moment the water boils to cook the potatoes. The carrots will cook for about an hour, and the beets - a little more. Peel the vegetables.

6. Finely chop the carrots and potatoes.

7. Finely chop the cucumbers, onions and beets.

8. Combine the vegetables in a bowl.

9. Add salt, pepper, season with the previously prepared dressing and mix. The vinaigrette is ready to eat.
