These little sausages are traditionally grilled over charcoal, but can also be fried in a cast iron skillet. Serve with rice noodles or steamed jasmine rice with fresh mint and cilantro, cucumbers and pickled carrots. Top with green chilies and toasted peanuts, then drizzle with fish sauce and lime.

450 g pork
1 tbsp + 1 tsp jasmine rice
1 tbsp sugar
1.2 tsp freshly ground black pepper
1/2 tsp plain salt + 1/4 tsp sea salt
1/2 tsp baking powder
2 tbsp fish sauce
2 tsp grated garlic
canola, grapeseed or other neutral-flavored oil

1. Place a cast iron skillet over medium heat and add the dry rice. Cook, stirring constantly, until the rice is deep golden brown, 5 to 8 minutes. Remove from heat, transfer the rice to a small ovenproof bowl, and let cool.
2. Use a coffee or spice grinder to grind the cooled rice into a fine powder.
3. Place the rice powder, sugar, pepper, salt, baking powder, fish sauce, and garlic in a large bowl and stir to combine.
4. Add the chopped, cooled ground pork to the bowl and stir thoroughly for 1 minute.
5. Heat a cast iron skillet over medium heat. Use a heaping tablespoon of the pork mixture to make a small, thin sausage patty. Add about a teaspoon of oil and cook the patty for 2 to 3 minutes on each side. Taste and, if necessary, add salt or any other seasonings to the raw sausage mixture and mix until smooth.
6. Form the minced meat into sausages, insert wooden skewers, and cook the sausages on the grill or in a cast iron skillet.
