Baked ravioli

Olive oil – 2 tbsp
Onion, medium, finely chopped – 1 pc
Crushed garlic – 3 cloves
Salt, pepper
Thyme or dried oregano – 1.5 tsp
Whole tomatoes (canned) – 700 g
Sliced tomatoes (canned) – 700 g
Ravioli – 900 g
Mozzarella cheese in pieces – 1.5 cups
Grated Parmesan cheese – 0.5 cups

1. Preheat oven to 425 degrees. Sauté onion and garlic, season with salt and pepper, in olive oil for 5 minutes, stirring occasionally, until soft. Add thyme and tomatoes. Bring to a boil, reduce heat and cook for 20-25 minutes, breaking up tomatoes with a spoon, until sauce has thickened and reduced to about 5.5 cups.
2. Cook ravioli in boiling salted water (just enough for them to float to the surface; the ravioli will finish cooking in the oven). Toss them with sauce and place in a large baking dish, sprinkle with cheese. Place in preheated oven for 20-25 minutes. Cool slightly and serve. Enjoy!
