This recipe for a green salad with an unusual combination of ingredients is Israeli. In addition to greens, the composition includes nuts, olives, sweet raisins or dried cranberries. To make the Israeli green salad more filling, you can add quinoa or couscous. Be sure to try cooking it.
All the greens need to be bought fresh, so that the sprigs are green and elastic. Wilted greens are not suitable for making a green salad.
But if you bought a bunch of parsley and cilantro, and on the way home the greens have wilted a little, then you can refresh them. To do this, you need to pour cold water into a deep bowl, put ice cubes in the water and dip all the wilted greens into it. Be sure to untie the bunches of greens and distribute the sprigs in ice water. Place the bowl of greens in the refrigerator for 1 hour. This will help revive the greens.
Any nuts will do for the green salad, these can be almonds, walnuts, pine nuts or hazelnuts. You can also use almond petals for this salad. Raisins or dried cranberries add piquancy and sweetness to the salad. If you could not buy dried cranberries, add dark or light raisins to the dish. 2. Rinse all the greens under running water, wash the cilantro and parsley sprigs thoroughly. If the cilantro and green onions have roots, they should be cut off in advance, as dirt and soil particles accumulate there. Rinse all the greens several times and let the excess moisture drain.
3. Chop all the greens coarsely, you can tear the mint leaves off the stem if they are small. You do not need to add the white part of the green onions to the salad.
4. Rinse and cut the celery stalks into small pieces. Choose juicy, fresh celery for the green salad.
5. Combine the chopped celery stalks, all the chopped greens and drained olives in a bowl. If the olives are large, you can cut them into 2 parts.
6. Rinse and chop the nuts. Raw nuts are more useful, but if you like toasted nuts, you can dry them in a dry frying pan after rinsing.
7. Drain the raisins, add them to a bowl with green herb salad. Add a portion of chopped nuts. I used hazelnuts, almonds and walnuts. The Israeli salad recipe allows for all these options.
8. Prepare a dressing for a green salad. Mix olive oil, lemon juice, salt and sugar. If you do not eat white sugar, then you can add honey. Mix everything until the grains of salt and sugar dissolve.
9. Dress the green salad with the prepared dressing based on olive oil. Mix everything carefully, taste if there is not enough salt and lemon juice, add to taste.
