Cottage cheese and poppy seed casserole with berries

Cottage cheese goes well with berries, this combination makes the casserole very healthy. Preliminary preparation will take some time, and in the microwave, the cottage cheese and poppy seed casserole is prepared in just a few minutes. This dessert can be prepared all year round, because both fresh and frozen berries are suitable.

Cottage cheese (5% fat) – 150 g
Fresh or frozen berries – 100 g
Egg – 1 pc.
Milk (2.5% fat) – 50 ml
Cream (20% fat) – 25 ml
Sugar – 20 g
Poppy seeds – 10 g
Flour – 10 g
Baking powder – 1 pinch

1. Cottage cheese of any fat content will do. Adjust the amount of sugar to your taste. It is not necessary to defrost frozen berries.
2. Pour poppy seeds into a saucepan and pour boiling water (100 ml). Stir and leave until completely cool.
3. When the water has cooled, drain it.
4. Bring milk to a hot state in a separate bowl. Add hot milk to the poppy seeds and pour in 10 g of sugar. Put on low heat and cook for 10-15 minutes, until the poppy seeds absorb the milk.
5. As soon as all the milk is absorbed, turn off the heat.
6. Transfer the poppy seeds to a mortar and grind well. This poppy seed filling can be cooled and stored in the refrigerator.
7. Place the cottage cheese in a deep bowl. Beat in an egg. Mix well to break up the curd lumps.
8. Pour in 10 g of sugar. Mix.
9. Pour in the cream and mix again.
10. Pour in the sifted flour and baking powder, mix well.
11. Add the poppy seed filling to the curd mass. Mix. If desired, you can add a pinch of vanillin or another flavoring, such as orange or lemon zest.
12. For baking, you can use portioned ramekins or take one large mold. Place the berries on the bottom of the molds. I used black currants straight from the freezer.
13. Evenly distribute the curd mass over the berries in the molds. I used 2 tablespoons in each mold.
Shake the molds slightly so that the curd mass settles and there are no empty spaces. Place in the microwave for 4 minutes at 800 W. After baking, do not open the door for another 3 minutes.
14. The curd and poppy seed casserole with berries is ready.
15. Can be eaten warm or cold, on its own or with sweet additives.
