Blueberry dumplings with kefir

It is hard to imagine Ukrainian cuisine without vareniki: with potatoes, cabbage, meat, mushrooms, cottage cheese or berries.

The filling options can be different, as well as the methods of making the dough. Today I want to tell you how to make blueberry vareniki with kefir. In the summer, among the abundance of dishes that can be made from berries, these vareniki take pride of place in our family. They turn out tender, fluffy, with a juicy berry filling - few can remain indifferent to them. This dish should be served hot with butter or sour cream. I'm sure it's worth a try!

Ингредиенты

Kefir - 200 ml

Chicken egg - 1 pc.

Soda - 1/2 tsp

Salt - 1/4 tsp

Sugar - 1 tsp

Wheat flour - 400-450 g

Filling:

Blueberries - 1.5 cups

Sugar - 70 g (or to taste)

Sour cream or butter - for serving

1. Warm up the kefir a little, add soda, salt and sugar. Mix and leave for a few minutes. A reaction should occur between the soda and the fermented milk product.

2. Then beat in the egg and mix again.

3. Pour in the sifted flour in parts. You may need a little more or less flour, everything will depend on its quality.

4. Knead an elastic, springy dough that does not stick to the table and hands. Put the dough in a bowl, cover with a towel and leave to "rest" for 30 minutes.

5. Sort out the blueberries, remove debris, crushed and spoiled berries. Wash well and place on a sieve to drain the water.

6. Divide the finished dough into 3 parts. Roll out each part of the dough into a layer about 4-5 mm thick. There is no need to roll it out thinner so that the juicy blueberry filling does not leak out during cooking. 7. Cut circles out of the dough using a glass or cup. The diameter of the cutout will determine the size of the dumplings.

8. Put 1 teaspoon of blueberries in the center of each piece.

9. Sprinkle with sugar.

10. Fold the circle in half and carefully pinch the edges, forming a dumpling.

11. Boil water in a saucepan, add a little salt. Carefully lower some of the dumplings into the water, stir so that they do not stick to the bottom of the pan. As soon as the dumplings float to the surface, cook for another 3-5 minutes.

12. The dumplings with blueberries on kefir are ready. Remove them with a slotted spoon and serve, greased with butter or sour cream.
