Pieces of pork with vegetables fried until golden brown are stewed in a sweet and sour sauce, the meat turns out incredibly soft and juicy, and the vegetables perfectly complement this exquisite, rich bouquet.

1. Cut the pork into small pieces.
2. Place in a frying pan with vegetable oil, preheated.
3. Fry over high heat until a nice golden brown crust appears.
4. Peel the onion and cut into small cubes.
5. Cut the carrots into slices.
6. Add the onion and carrots to the meat in the frying pan.
7. Mix and fry everything together until the vegetables are soft, about 2 minutes.
8. Meanwhile, let's work on the zucchini, potatoes and tomatoes. Cut the zucchini into 1.5-2 cm pieces. If the zucchini is not young, then it needs to be peeled and seeded. I had young zucchini.
9. Transfer the chopped zucchini to a cauldron or other suitable dish in which we will stew the stew.
10. Cut the potatoes in the same way as the zucchini.
11. Transfer to the zucchini.
12. Scald the tomatoes with boiling water and peel them.
13. Chop them like the previous vegetables and add to them.
14. Mix the zucchini, potatoes and tomatoes.
15. Peel the peppers, remove the seeds and stems and cut into small squares.
16. Cut the garlic into slices. Those who like it spicy can add hot pepper to the stew, but don't get carried away, half a pod will be enough.
17. Add the pepper and garlic to the pan and fry for half a minute, stirring constantly. Then add the tomato paste, stir, cover with a lid and simmer for another half minute over medium heat.
18. Transfer the contents of the pan to the cauldron, to the rest of the vegetables. Stir, add salt, black pepper, bay leaf and 2 cups of water.
19. Place the cauldron on high heat and cover with a lid until it boils. Then reduce the heat to medium and simmer the meat stew with vegetables until the sauce thickens (30-40 minutes).
20. By this time, the stew will be almost ready. Finely chop the dill and parsley.
