2/3 cup raw cashews
2 glasses of cold water
2 medium English cucumbers, peeled and chopped
1 1/2 cups green grapes
2 garlic cloves
2 tablespoons sherry vinegar
2 1/2 teaspoons kosher salt
1/3 cup extra virgin olive oil, plus more for drizzling
Green onions, thinly sliced green grapes and/or thinly sliced cucumber for garnish

1. Let the bread, cashews and water stand in a powerful blender for 5 minutes.
2. Add chopped cucumbers, grapes, garlic, vinegar and salt to the blender; Puree until smooth, about 1 minute.

4. Refrigerate, covered, about 1 hour.
