Pannukakku - Finnish pancakes in the oven

A thin pie made from pancake dough, baked in the oven and cut into squares, is known to us as lazy Finnish pancakes (panukakku). Lazy - because only one pancake is baked, and no one bothers with its baking. Throw it in the oven and wait for the result.

Butter - 65 g

Milk - 500 ml

Eggs - 2 pcs.

Sugar - 65 g

Flour - 160 g

Baking powder - 2/3 teaspoon

Salt - 1/3 teaspoon

1. Heat the milk to a warm temperature. Add salt and sugar.

2. Add butter. Stir (the butter should melt).

3. Sift the flour into a separate bowl. Add baking powder.

4. Add the liquid mixture into the flour in parts.

5. Stir, rubbing the lumps.

6. Beat the eggs.

7. We also gradually introduce them into the dough.

8. The dough should be liquid and homogeneous - leave it for 10-15 minutes. Turn on the oven to preheat to 180 degrees if it is with convection, or to 200 degrees if without.

9. Cover a baking tray measuring 25x19 cm with a sheet of parchment (both the bottom and the sides should be covered, with no gaps where the dough could flow). The edges of the parchment peek above the edge. Pour the dough onto a baking sheet.

10. Bake until browned, 40 minutes (adjust to your oven, baking may take 30 or 45 minutes).

11. In the oven, the pancake will become embossed, and while cooling after baking it will settle a little.

12. Cut the pancake into portions and serve.
