Shortbread rolls with rhubarb and cinnamon

To make tubes, it is recommended to choose young rhubarb stems, without hard fibers. If you have large stems, you can cut them lengthwise into several pieces.

Rhubarb - 200 grams

Butter - 100 grams

Flour - 200 grams

Ground cinnamon - 1 tsp.

Sugar - 200 grams

Egg white - 1 pc.

Cold water - 50 ml

1. Pour sifted flour, 50 grams of sugar into a deep bowl and add butter.

2. Using a knife, turn the mass into fine crumbs. Add cold water and gather the dough into a tight ball.

3. Wrap the dough in film and cool for 30 minutes.

4. Peel the rhubarb stems and cut into small pieces, 7 cm long.

5. Mix sugar and cinnamon. Lightly beat the whites.

6. Using a kitchen rolling pin, roll out the dough into a thin layer and cut into strips (7 cm wide). We spread the rhubarb, wrap it, cut off the extra piece of dough.

7. Dip each tube in egg white and sugar with cinnamon.

8. Place the sand tubes on the mold. Place in the oven, preheated to 180 degrees. Bake for 25-30 minutes.

9. Shortbread rolls with rhubarb and cinnamon are ready, let them cool.
