Italian spinach pie

I recently fell in love with spinach and only thanks to this pie.

Here I would like to present our imitation of the famous Italian pie. A very tasty combination of neutral, healthy spinach and sour-salty Feta cheese. Usually Italians prepare this pie only with Feta cheese. I myself adore this cheese, it has the right taste that spinach requires.

In the absence of Feta cheese, you can use feta cheese, like mine, or any pickled cheese with sourness and a salty note. Instead of onions, leeks go very well in this pie. If you manage to buy it, then feel free to add more to the pie without heat treatment. And this pie is made on the thinnest phyllo dough, but I use regular puff pastry. Believe me, it turns out not bad either.

Puff pastry - 600 g

Frozen spinach - 800 g

Brynza "President" - 100 g

Pickled cheese - 170 g

Eggs - 2 pcs

Milk - 30 ml

Green onion - 0.5 bunch

Onion - 1 piece

Black pepper

Vegetable oil - 1 tsp.

Water - 2 tbsp.

1. Thaw spinach and completely remove liquid. All the water needs to drain. Large spinach must be chopped.

2. If you take a leek, then you just need to chop it. But, since I have ordinary onions, I need to lightly simmer them in a saucepan or frying pan until soft, adding a drop of oil and a little water. No need to fry. Simply chop the green onions as desired.

3. Grate the pickled cheese. If you take Feta cheese, then you need to crumble it, like soft cheese "President".

4. Lightly whisk the eggs with salt and milk. Salt and pepper.

5. In a bowl, mix squeezed and chopped spinach, soft onions, green onions, and dill.

6. Add pickled cheese and crumbled soft cheese. I repeat, in order for the taste to be balanced and the pie to turn out delicious, you need to take cheese with sourness and well salted. Pour in the beaten eggs. Leave a little egg mixture for brushing the pie. Mix the filling well. If necessary, add salt. My pickled cheese was not very salty and could have been added a little more salt. Add black pepper to taste.

7. Divide the dough into 2 equal parts. Roll out one part thinner and place on a baking sheet. Then spread the filling evenly on top. Cover with the second piece of rolled out dough and pinch the edges well, tucking them inward.

8. Slice the pie without cutting through it to the bottom, but only outlining the boundaries of future cuts.

9. Brush with egg mixture and bake in an oven preheated to 190 degrees. The pie bakes for about 30 minutes.

10. The finished Italian spinach pie can be cut into pieces along the intended boundaries.
