Various soups can be prepared from Jizhi Gaotang, thick rice porridge is cooked on it, or used as a basis for the Chinese samovar hot pot.

The simplest version of Jizhi Gaotang broth is incredibly easy to prepare, it consists of only five simple ingredients. The only exception will be the ingredient that is not the most popular outside of China - Shaoxing wine, which can be found in online stores of Asian products or replaced with dry sherry. Jizhi Gaotang broth can be prepared for future use and stored frozen.

Ингредиенты

Chicken frame (soup set) - 500 g

Culinary wine "Shaoxing" or dry sherry - 50 ml

Water - 1.6 l

Salt or soy sauce - to taste

Ginger root - 3 cm

1. Wash the chicken frame thoroughly or pour boiling water over it.

2. Place the frame in a saucepan, cover with cold water and add the sliced ginger. You don’t have to peel the ginger, just wash it thoroughly.

3. Pour in wine or dry sherry, bring the broth to a boil and reduce heat.

4. Cook the broth at a low boil for 1 hour.

5. Remove the chicken frame; the meat from it can be used for other dishes. Strain the broth and add salt to taste, you can season with soy sauce.

5. Jizhi Gaotang chicken broth is ready, use it immediately or freeze until appropriate.
