Rice flour bread

Gluten-free bread made from rice flour with the addition of aromatic thyme and paprika.

Bread made from rice flour is quite unusual, or rather, unusual. White dough with unusual structure. Dry and brittle structure of the finished bread. We can say that this bread is for everyone, but for some this bread is a necessity due to gluten intolerance.

This is not to say that rice bread is not tasty, no! It is very tasty, especially on the first day after baking, like any other pastry. The bread has a peculiar aroma from rice flour, so during the process of kneading the dough I decided to flavor it by adding fragrant thyme. I think it would also be good with Provençal herbs.

I kneaded the dough in a bread maker and baked the bread in the oven in small loaves and a small flat cake. But you can bake one loaf by increasing the baking time.

Let's prepare the ingredients.

Rice flour - 450 g

Water (warm) - 270 ml

Dry yeast - 5 g

Salt - 1 tsp.

Sugar - 1 tsp.

Chicken egg - 1 pc.

Vegetable oil - 2 tbsp.

Thyme (fresh) - to taste

Sweet paprika (ground) - to taste

1. Prepare the thyme: tear off the leaves from the stem and chop them a little with a knife. The stems themselves are not needed.

2. Load all the products into the bowl of the bread machine (hereinafter referred to as HP), except paprika and thyme, following the instructions of the machine. In my HP model, liquid ingredients are first loaded: water, vegetable oil, egg, then salt and sugar, flour and dry yeast.

3. Turn on the program for kneading yeast dough. This process will take 1 hour 30 minutes.

4. After about 10 minutes, the HP will emit a signal, which means that you can add additives to the dough, at this moment we will add paprika and thyme.

5. This is what the dough looks like at the end of the fermentation process. It has increased in volume quite a bit, it cannot be stretched like dough made from wheat flour, because there is no gluten in rice flour.

6. It will be easier to form the dough from rice flour if you grease your hands with vegetable oil. Place the dough in the molds, filling them 2/3 full. Cover and leave in a warm place for 20-30 minutes, while we turn on the oven to warm up to a temperature of 200-205 degrees.

7. During this time, the dough has increased slightly in volume and looks more airy. I tried to make cuts on some of the loaves, but what I ended up with was more like dents.

8. Bake rice bread in a preheated oven until cooked. The small loaves took 22 minutes to bake, while the flatbread took about 27 minutes. The finished bread will turn a soft golden color, small cracks will appear, and it will increase in volume quite a bit.

9. Let the bread sit in the pans for 5-10 minutes, then cool it completely on a wire rack.

10. When cutting rice flour bread, you need to be careful and preferably with a serrated bread knife, so the bread will not crumble too much.
