Pork loin - 300 g
Onions - 40 g
Champignons - 150 g

1. Prepare the products according to the list. Peel the onion, wash together with the pork under running water, and dry with paper towels. Clean the mushroom caps with a clean kitchen sponge.
2. Cut the onion into half rings and the champignons into thin slices. Heat a little lean refined oil in a frying pan, add vegetables to it, fry them for a couple of minutes until golden brown, cool slightly.
3. Cover the pork meat with cling film, beat it thinly with a kitchen hammer, and transfer it to a baking dish. Season the chopped loin with salt and pepper to taste, and lightly brush with mild mustard.
4. Place the fried mushrooms and onions on the pieces of meat in equal parts.
5. Generously sprinkle the layer of mushrooms with grated hard cheese. Place the pan in an oven preheated to 190 degrees for 25 minutes. If desired, turn on the grill or convection five minutes before the end of cooking so that the cheese on top is covered with a crispy crust.
